Artisan Sourdough
When Master Baker Harald Mauch opened Harald’s Bread World in Napier, he brought a 100-year long, four-generation family history in European baking to Hawke’s Bay.
Using traditional European recipes making a wide range of different sourdoughs and Danishes. Harald’s emphasis is on health; all products are made from natural ingredients.
This three evening artisan bread course will have you baking like Harald in no time. You will produce sourdough baguettes, Danish pastries, potato bread, focaccia bread and a variety of buns.
Enjoy a grazing platter on the first night and light snacks in the following nights.

Barista - Hastings
Learn about the history of coffee, how to operate and maintain espresso machines, get hands-on practical training for all coffee styles and an introduction to customer service skills.
Students must be 16 years or older.
This course is run on one Monday, 9.00am – 3.00pm.

Bartenders
This short course is great for part-time university jobs, full-time work in hospitality, or just some bar skills to add to your CV.
Learn the principles and practices of bartending, host responsibility and how to serve beer, wine and spirits.
Students must be 18 years or older.

Bread and Beer
Join us for an exciting new short course where you can combine your love for bread and beer, and further your baking skills using beer bread grains. This course will be led by expert baker Harold Mauch.
During this course you will prepare, process and bake different products using beer. These delicious products will include beer bread with grains, German brezeln, rye bread and its variations.

Come along to our Short Course ‘Festive workshop on DIY Food Gifts’ for family and friends. Create your own meaningful gifts from the heart that include sustainable and creative packaging. At the end of each workshop, you will have approximately 5 (or more) gifts to takeaway, sustainably packaged and ready to wrap.
There are three separate workshops – you can attend one, two, or all three!

Food Costing
Learn to accurately cost food recipes and further develop your skills and knowledge related to food cost control measures in a commercial kitchen.
Throughout this course you will learn to calculate accurate food costs, apply portion and waste control measures and evaluate menu engineering data in order to improve financial efficiency.
The structure of this fully online course includes interactive activities, videos and practice quizzes which you can use to test your knowledge.
Course content includes:
Theoretical vs Actual food costs – understanding the cost of your dish verses what your accountant tells you.
Maximising the profit potential of your menus.
Menu Engineering – manipulate menus to maximise gross profit.
Analyse and reduce waste.
The course involves fully online learning plus an applied project. It is self-paced, which means you can work through it at times that suit you and your work schedule.

Greek Cookery
Come and enjoy a night of Greek cuisine.
Learn to cook a Greek lemon chicken and potatoes, a Greek salad and Bougatsa.
Bougatsa (Greek μπουγάτσα [buˈɣatsa]) is a Greek breakfast pastry (sweet or savoury) consisting of either semolina, custard, cheese, or minced meat filling between layers of phyllo.

Junior Chef
Join us for our next School Holiday Junior Chef Short Course.
One of our highly skilled Chef Tutors will take you through an exciting themed short course (theme to be advised) that will inspire you to continue on your pathway to becoming a Chef and impress all those you cook for!

Plant-based Complex Cooking
Advance your plant-based cooking creations
Discover how to create healthy and delicious plant-based dishes that go beyond the standard vegetarian fare. During this course you will develop your knowledge of plant nutrition, indigenous foods and foraging, and advanced plant-based menus that will delight the most voracious of carnivores!
This course will allow your progression from Level 3 to 4, further increasing industry and community plant-based cooking skills, catering to the increasing trend for plant-based food. It will enhance the capability of staff in local Cafés and Restaurants and interested members of the community as they work through edible plant preparation, complex cooking techniques, plant-based menus and nutritional features of plants.
NB: The term ‘complex’ is standard for Level 4 Cookery in New Zealand, with the definition in the NZ Certificate in Cookery [Level 4] being: “Complex refers to the use of an intricate combination of preparation techniques, cooking methods, and processes, using fresh ingredients, differing flavours and textures, and innovative finishing and presentation techniques”.
The programme covers five modules and your learning will culminate in the creation of a plant-based degustation meal at Scholar’s Restaurant for family and friends.

Plant-based Taster
