Food Costing
Learn to accurately cost food recipes and further develop your skills and knowledge related to food cost control measures in a commercial kitchen.
Throughout this course you will learn to calculate accurate food costs, apply portion and waste control measures and evaluate menu engineering data in order to improve financial efficiency.
The structure of this fully online course includes interactive activities, videos and practice quizzes which you can use to test your knowledge.
Course content includes:
Theoretical vs Actual food costs – understanding the cost of your dish verses what your accountant tells you.
Maximising the profit potential of your menus.
Menu Engineering – manipulate menus to maximise gross profit.
Analyse and reduce waste.
The course involves fully online learning plus an applied project. It is self-paced, which means you can work through it at times that suit you and your work schedule.

Food Safety - Hawke's Bay
Our Certificate in Food Handling helps attendees understand how to keep food safe and customers from getting food-borne illnesses. The course meets Napier and Hastings Council’s requirements as a Food Worker in any hospitality business.
The course works through the Food Control Plan and all the forms you would be using on a shift to ensure food is safe and meeting compliance requirements.

This course offers essential training on all things related to food safety, such as hand hygiene, personal hygiene, cleaning, food allergies, hazardous food, preventing cross contamination and much more.
Upon completion of this certificate you will have gained knowledge on how to implement a food control plan.

Feed the Soul
Join us for our next school holiday Junior Chef short course (theme to be advised).
One of our highly skilled Chef Tutors will take you through our exciting short course that will inspire you to continue on your pathway to becoming a Chef and impress all those you cook for!

After completing the License Controllers Qualification (LCQ) you will be able to demonstrate knowledge of the Sale and Supply of Alcohol Act 2012 and the responsibilities and requirements for service of alcohol in a licensed premises.
Students must be 18 years or older.
