Entreēs for Aspiring Bakers

Two new programmes aimed at would-be bakers launch at EIT in March 2017.

The New Zealand Certificate in Baking (Generalist) Level 4* will cover the basic skills needed for working in bakeries, from artisan bakehouses through to supermarkets.

“There’s a worldwide shortage of skilled people in the industry,” says EIT’s bakery head tutor Korey Field.

Students gaining either qualification can immediately take their place in the work force, progress to further industry-based training or set their sights on securing an apprenticeship.

The certificate programmes cover the basic principles of making bread and pastry as well as food hygiene, first aid and health and safety compliance regulations. In addition to classroom tutorials and practical hands-on instruction in the kitchen, students will be required to undertake work experience.

Only 15 places are available and they are already attracting considerable interest. As pluses, he points to increasing mechanisation which means baking isn’t the heavy work it once was, nor is it now a predominantly male industry.

“And for those aiming to own their businesses,” Korey says, “a well-run bakery can offer great returns.”
